My family are big soup lovers. During the winter we make all sorts of soups. My favorite soup is typically ramen soup as it is extremely flavorful and versatile.
As I was browsing Instagram in search of dinner ideas, this Coconut & Coriander Noodle Soup stood out for how stunning it looked. It was also surprisingly quick and easy to make.
The original recipe by Sarah Doig is vegan. I however, added shrimp to my version to make it a bit more filling and to add more protein. It is of course completely optional.
The broth is absolutely delicious and great for warming you up on a cold night! For the noodles I would recommend either ramen or udon. Both will work great with pulling together this meal.
