In the past when I have made this Hamantaschen I have also made Rainbow cookies to stick in the middle. However due to time this year we store bought the rainbow cookies. This recipe use a chocolate dough as the base. Then is filled with raspberry filling. If you choose to you can put both Raspberry and Apricot filling in the middle. However a must is putting a rainbow cookie in the middle. For the dough use your favorite chocolate dough. My mom and I are still working on perfecting a dough for it. Hopefully next year we will have an amazing one to share!
