My Recipe inspiration was from Good Housekeeping.
This was a fun and quick meal to make. Often when I cook with my mom we don’t measure ingredients, we just estimate. I encourage you to do the same. It is fun and creative.
I was in the mood for tacos, but didn’t want ground beef, so I decided on shrimp instead.
Ingredients
Shrimp (peeled, deviened and tail OFF)
Tortilla Wraps
Avocados
Frozen or Fresh Mangoes
Cotija cheese
Radish
Canned chipotle peppers
Sour cream
Garlic
Cilantro
Jalapeno
Salt
Lime

Method
1. Guacamole: Cut avocados. in to chunks and set aside. Mash cilantro, garlic and salt in a bowl or mortar and pestle. Add the avocados and mash. Add diced onion and jalapeno Mash until combined. Sprinkle some salt to and lime juice. Mix to combine. Taste to see if it needs more of anything and go from there.
2. Shrimp: Preheat Air fryer to 400. Add shrimp to a bowl with olive oil, cilantro, salt, pepper, lime juice and a tablespoon of canned crushed chipotle peppers. Let marinate for 5 minutes. Place in air fryer and cook for 5 to 8 minutes depending on size of shrimp.
3. Toppings: Cut radish into thin slices. Cut mangoes into small pieces. Crumble Cotija into pieces.
4. Chipotle Crema: Blend chipotle peppers, juice of 1 lime and sour cream together in a blender. Start with a very small amount of chipotle pepper ( 1 tsp) to 4 oz of sour cream and increase pepper or sour cream to your tasting.
5. Build Your Tacos: Warm your tortillas on the stove, oven or microwave. Spread with guacamole. Add shrimp, drizzle the chipotle crema and layer with the toppings.
