For the second dinner I made for my family I made Chorizo- Stuffed Zucchini.
While I did enjoy it, a change I would make would be Instead of using Chorizo sausage links as the recipe calls for I would swap it for ground chorizo.
The good part about this meal is how quick it is to make. The most difficult part for me was cutting the Zucchini in half. Some of my “halves” were more like a quarter of the Zucchini.
